Provolone Dolce is a cheese from cow’s milk, with a delicious, semi-sweet, milky flavor. Although its origin is southern Italy, it is mainly produced in the valley of Pado, in northern Italy. It matures for about 3 months and thus gets a rich flavor without being too salty so it is also called dolce, which means sweet.
You can enjoy it in so many ways: in cheese platters, sandwiches, tarts, and pizza. Its mild and velvety taste wants a medium-bodied red wine and soft tannins. Try it with Merlot or Agiorgitiko.
