Fabien Jouves is a true - born of Cahors. Cahors is located just outside Bordeaux and is home to Malbec. Fabien’s family owned vineyards that were passed down from generation to generation and were cultivated with passion for years but weren’t used for making private labeled wine. They were giving the grapes to local cooperatives, until in 2006 everything changed. Fabien set up the boutique Mas Del Perie winery on Trespoux Hill and chose the best vineyards, the best parcels, and the best soils to apply biodynamic cultivation and make his own epic wines. The return to roots and purity was absolute, as he wanted to make natural wines, without additives or other interventions. It didn't take long to draw well-known wine critics’ attention like Robert Parker and the whole wine world to talk about the young and pioneering winemaker who makes Malbec like no one has ever dared. He divides his wines into 2 categories: thirst-quenching wines and terroir wines.
For the latter, he follows the philosophy of Burgundians and vinifies each vineyard separately to highlight the particular terroir and the different aspects of Malbec. Les Escures comes from a vineyard in 350 meters altitude, with 25-year-old vines. Harvest is always done manually and only the best grapes are selected, which are later macerating for 30 days and ferment in concrete tanks with indigenous yeasts. After the end of fermentation, the wine matures for 6 months on its fine lees.
