Fabien Jouves' You F&@k My Wine ?! is a provocative red wine, and keep in mind that its name is less provocative than its content. We've never encountered such an enjoyable natural wine, with amazing fruit purity, intended to quench your thirst the best way ever!

Cahors is an idyllic village just outside Bordeaux. Fabien Jouves, a true-born of the area, created the boutique Mas Del Perie winery in 2006. He chose the best vineyards and decided to apply biodynamic cultivation and make wines with zero interventions, which respect the environment, the terroir, and the character of each variety. Fabien Jouves, the next big thing of Cahors as they call him, makes outstanding natural wines in super limited quantities, which fall into two categories: Vins de Soif (thirst-quenching wines) and Vins de Terroir (terroir wines). And we are telling you with certainty that he is mastering both categories! Vins de Soif are these juicy, delicious wines that you must enjoy with great company and crazy fun. The wines that you share with your friends, you prepare the BBQ and suddenly you set up the most unforgettable parties!

The special You F&@k My Wine is a blend of Jurancon Noir and Malbec. The grapes come from 50-year old vines. The harvest is done by hand and is followed by whole-bunch fermentation, in oak barrels and concrete tanks. Then the wine matures there for 6 months. Every step in the birth of this wine has been carefully calculated by Fabien to create a natural wine with such a special character that reflects the terroir and personality of its creator.

As for its name? Strict French law does not allow the use of Jurancon Noir in Cahors PDO wines and regulators told Fabien he has to remove Jurancon Noir from his wines. But because it's his favorite, he chose to give another name to his wine and an astonishing answer to French legislation, like Robert de Niro in Taxi Driver.

It has a moderate purple color and intoxicating aromas of cherry, raspberry, redcurrant, blueberry, plum, and sour cherry accompanied by notes of licorice, herbs, and leather.

PAIR IT

Pair it with chicken ribs with BBQ sauce, spaghetti napolitana, pizza margherita, tuna fillet with caponata.

Roasted duck

1 duck, about 3 kg
1 kg of potatoes, peeled, cut into large pieces 
4 onions, chopped
50g of duck fat
2 cloves garlic, finely chopped
1 tablespoon chopped sage
2 lemon zest

Preheat the oven to 220 ° C.

Season the duck with salt and pepper in the cavity.

Boil the potatoes in salted water until soft, then drain them well and mush them. Fry the onions in duck fat until they get a golden brown colour. Add the garlic to the potato puree and mix with sage, lemon zest and pepper. Put the mixture in the duck's cavity. Put the duck on a spacious baking tray in the middle of the oven. Bake for 30 minutes in 220 ° C.
Then, lower the temperature to 180 C or 160 C and roast the dusk for 2 ½ hours.
When the duck is cooked, remove it from the oven and leave it to rest for 15 minutes.
We recommend serving it with red cabbage and baked potatoes.
