The winery was started in 1880 by Simon Bize who started buying and planting vineyards at key sites in Cotes de Beaune. In 1950 his grandson decided to bottle wine under his name and so little by little the winery began to establish its brand and grow. Now at the helm is the fourth generation of the winery. As you well understand this is a boutique and family winery that makes limited bottles from some of the most important vineyards and villages of Burgundy. The Domaine Simon Bize Savigny les Beaune Rouge 2016 is one of them and it is simply wonderful.
The grapes come from vineyards planted between 1965 and 1978. After the strict sorting, the grapes are fermented mainly in whole bunches, with ambient yeasts, in oak casks. After fermentation, the wine ages in French oak barrels (mainly old). Finally, it is bottled unfiltered. The main concern of its creators is to express as best as possible the terroir and the elegance of Pinot Noir.
