Pet Nat Vassaltis is by common consent one of the best, if not the best, Greek pet nat wine, with an unimaginable value for money. Every year it sells out faster and faster, leaving its hundreds of fans complaining about not getting a sip of it.
Vassaltis winery may be one of the newest wineries in Santorini but it never ceases to amaze us. With a name inspired by the black volcanic rock formed by the cooling of basaltic lava that covered the island of Santorini after the volcano erupted, almost 4,000 years ago, Vassaltis Winery has now proven that it can and does make great wines in any style and price. Pet Nat Vassaltis is one of them and as its name suggests it is a sparkling (petillant naturel), with elegance and grace. Its blend consists of Savvatiano and a dash of Athiri. The wine starts the fermentation in stainless steel tanks and before it is finished it is bottled. Thus, the produced dioxide is trapped in the wine and creates tiny bubbles. Due to the fact that the fermentation is completed in the bottle, the wine is not filtered and is therefore slightly cloudy.
