Why do we love it?

You probably remember that Markovitis Winery produces one of the best Xinomavro wines in the Naoussa region! Now, it's time to try it in its rosé version. Greece’s first organic vineyard has truly brought out the best in this variety!

Young winemaker Markos Markovitis, after studying oenology at LVWO Winsberg in Germany, is now leading the historic Naoussa winery as the third generation. He firmly believes that a winemaker should fully identify with the variety they cultivate. A unique feature of the winery is its 140-acre single vineyard, planted in 1972 by his grandfather, which has developed into a distinctive ecosystem. With limited production, it consistently delivers grapes of great power and exceptional ripeness.

For the 2023 Xinomavro Rosé, the harvest was done by hand, and the wine fermented with native yeasts in stainless steel tanks, followed by malolactic fermentation. This combination resulted in a highly appealing wine, where the grape’s fruity freshness is complemented by its signature tomato-like character, reminding us of its origins!

We tasted it and absolutely loved it alongside stuffed eggplants with braised beef and feta, while it’s still young and vibrant. But we also agreed that it’s going to evolve beautifully over the next 2–3 years!

Tastes Like

Light rosé with faint orange highlights. On the nose, the aromas of rose petals, cherry, dried cranberry, strawberry-vanilla caramel and sanguine are strong, while then the typical fresh tomato aromas appear.

In the mouth, it is fresh with cool acidity. It has a slightly oily feel and the aromas follow those of the nose, with strawberry and caramel predominating.

with all the summer oily dishes of Mediterranean cuisine and with pasta with tuna in tomato sauce.

Stuffed veggies with couscous

For stuffing
- 250 g couscous
- 3 fresh onions
- 1 dry onion
- 2 cloves of garlic
- 1 small bunch of parsley
- 2 tablespoons of black currants
- 2 tablespoons pine nuts
- 40 ml. olive oil
- 150 ml. tomato juice
- Freshly ground pepper
- Salt

You will also need:
- 4 tomatoes
- 4 zucchinis
- 4 green peppers
- 60 ml. olive oil
- 100 ml. tomato juice
- Freshly ground pepper
- Salt

Cut and remove the lids from the veggies and empty the interior.

In a large bowl, finely chop tomatoes, parsley, onions and garlic. Add tomato juice, pine nut, raisins, salt, pepper and 40 ml. olive oil, mix and add the couscous and 50 ml. water.

Stuff the vegetables and place them in a large saucepan next to each other. In a bowl, mix 60 ml. olive oil, 100 ml. tomato juice, 150 ml. water, salt-pepper and pour over the veggies.

Place the saucepan on medium heat, for 3-4 minutes and then simmer for about 35 minutes, until the vegetables are softened or when the juices run out. Let cool and serve or you can eat it cold.

Notes
- You can add in the pot and a couple of potatoes cut into chunks.
- You can make it in the oven too.
- Pine nuts and raisins can be omitted.
