Why do we love it?

Moschopolis 8 is the wine for which the term “Badass Rose” was invented. Don't be fooled by its light color and delicate, translucent bottle, this rose is like no other. And this year, like every other year, we loved it for its structure, intensity, and complexity that makes it stand out from all the other rose wines out there.

Winemaking techniques are the same as the recipe that succeeds doesn't change! The 8-month maturation in oak barrels is responsible for its complexity and discrete character. The barrels used are both new (30%) and old (70%). The blend is also well-known and indispensable, with Syrah and Xinomavro playing in equal proportions. And the conclusion is that anything carrying the Germanis family's signature is nothing less than top-notch! Rarely a rose wine can provide such excitement, and even more rarely it can stand right next to so many, difficult and complex dishes, such as tuna fillet with caponata or spaghetti with smoked eel and pecorino.

Bottles are extremely limited so you know what to do if you want a few bottles of this beauty!

Tastes Like

It has medium pink color with orange hues.

Intense and attractive nose, that magnetizes you from the first moment with sweet cherry, ripe strawberry, vanilla, and rose notes. After a while, tomato jam, butterscotch, and toast make their appearance.

On the palate, it is rich and oily, with crisp acidity and a slight suspicion of tannins that give a nice structure. Strawberry, cherry, sweet tomato and white pepper meet vanilla, tobacco, toasted brioche, and toffee caramel. Enjoyable toffee aftertaste that just does not end.

PAIR IT

Pair it with pasta with smoked eel, large fish on charcoal or stuffed tomatoes.

Ravioli with sun-dried tomato pesto and chicken

For tomato pesto

  • 200 g sundried tomatoes
  • 100 g Parmesan cheese grated
  • 80 g pine nuts
  • 1 clove of garlic
  • 50 ml olive oil

 For the chicken

  • 1 fillet of chicken
  • 1/2 tsp. thyme
  • 1/2 tsp. basil
  • 1/2 tsp. rosemary
  • 1/2 cup of oil
  • 1/2 lemon

For the pesto

Peel the garlic and remove the green part. Add all the ingredients to a blender and beat them until the mixture is homogenized.

For the chicken

Cut the fillet into thin strips. In a bowl, mix all other ingredients. Marinate the chicken in the mixture for at least one hour.

In a preheated  oven (200°C) , bake the chicken for about 5 minutes on each side until it gets a golden color.

Boil the ravioli according to the manufacturer's instructions.

Serve by spreading the pesto of sun-dried tomatoes over the pasta and add chicken slices on the top.
