The Makryonitis Syros Distillery is a hidden gem on the island of Syros, born from a long-standing family tradition in distillation. The raw materials are sourced exclusively from local products of the surrounding Cycladic islands, with the best results coming from grape pomace of arid regions, which possess immense aromatic potential that is ultimately reflected in the final product.
The grape varieties Assyrtiko, Monemvasia, and Serfiotiko are the stars of the show, but the finishing touch always comes from proper aging in oak barrels. The secret lies in the use of dehydrated seawater, an innovative approach to utilizing all the natural resources of a Cycladic island!
The aging process takes place in French oak barrels that previously held Bordeaux or Vinsanto wine. Each spirit's aging profile is unique, influenced by factors such as the charring of the barrels and, most importantly, the island's climatic conditions each year. Each bottle is adorned with a unique four-digit number. The first two digits indicate the distillation year, while the next two represent the years the tsipouro was aged in the barrel.
The aged tsipouro Makryonitis 2101 is a premium spirit you must try.
In the glass, it boasts a deep golden color. Aromas of ripe peach, orange peel, roasted almonds, fresh vanilla, honey, honeycomb, raisin, and clove emerge.
On the palate, it is rich, offering flavors of citrus fruits, white flowers, hazelnut, honeycomb, oak, vanilla, cinnamon, and hints of smoke.
