Why do we love it?

The wines of Santorini are known for their special character, a result of her unique terroir, but the Aidani of Hatzidakis Winery is known for its originality and its charismatic, late creator.

Haridimos Hatzidakis was undoubtedly one of the greatest Greek wine producers. A wine genius with endless talent, a man with a vision that changed the logic of the most important wine zone in Greece, putting it in the loudest way on the world map.

Aidani, on the other hand, is one of the rarest indigenous varieties of Santorini. Less known than Assyrtiko, in one of its few single varietal vinifications, it impresses with wines like this. Aidani of Hatzidakis Winery comes from the oldest vineyard of the estate, which is grown organically from the very first moment. After fermentation, it remains in the stainless steel tank for 6 months, and then it is bottled without filtering in the bottle with the child’s drawing on the label, designed by Haridimos’s daughter when she was 3 years old. Now Stella, older and wiser, has taken the reins of the winery and is continuing what her father left off.

Aidani of Hatzidakis Winery, apart from being delicious and complex, is almost collectible!

Tastes Like

It has deep lemon color with golden hues and bold aromas of sweet, ripe fruit such as peach, bergamot, citron, bitter orange, grapefruit, and caramelized lemon. If you think we're done here, you're wrong: discreet notes of honeysuckle and orange blossoms are accompanied by honey, wet stone, and toast.

In the mouth, everything flirts with "intense". Moderate acidity(+), moderate(+) body, and absolute balance.

AIDANI 2022 - HATZIDAKIS WINERY

PAIR IT

Pair it with stuffed tomatoes, salads or white cheeses.

Stuffed veggies with couscous

For stuffing
- 250 g couscous
- 3 fresh onions
- 1 dry onion
- 2 cloves of garlic
- 1 small bunch of parsley
- 2 tablespoons of black currants
- 2 tablespoons pine nuts
- 40 ml. olive oil
- 150 ml. tomato juice
- Freshly ground pepper
- Salt

You will also need:
- 4 tomatoes
- 4 zucchinis
- 4 green peppers
- 60 ml. olive oil
- 100 ml. tomato juice
- Freshly ground pepper
- Salt

Cut and remove the lids from the veggies and empty the interior.

In a large bowl, finely chop tomatoes, parsley, onions and garlic. Add tomato juice, pine nut, raisins, salt, pepper and 40 ml. olive oil, mix and add the couscous and 50 ml. water.

Stuff the vegetables and place them in a large saucepan next to each other. In a bowl, mix 60 ml. olive oil, 100 ml. tomato juice, 150 ml. water, salt-pepper and pour over the veggies.

Place the saucepan on medium heat, for 3-4 minutes and then simmer for about 35 minutes, until the vegetables are softened or when the juices run out. Let cool and serve or you can eat it cold.

Notes
- You can add in the pot and a couple of potatoes cut into chunks.
- You can make it in the oven too.
- Pine nuts and raisins can be omitted.
