They have succeeded in restoring old Tannat and Torrontes vines and creating wines that combine freshness and vivid acidity with juicy, dense fruit. Amauta Torrontes El Porvenir de Cafayate is one of them, as we mentioned above. The harvest takes place in two phases, in early and mid-February, to compose a wine with complexity, acidity, and intense fruit combined with floral character. To preserve all of the above, the fermentation takes place in stainless steel tanks, and malolactic conversion is avoided.
