Why do we love it?
Chablis 1er Cru Vaillons Raoul Gautherin, is a very characteristic and classic Chardonnay from the prestigious Chablis, which combines the elegant aromas of white flowers, with juicy fruit and the very special minerality of the region. The epitome of Chablis quality has just arrived at such a price that you no longer have to wonder which wine you will consume in the following period!
 
Vaillons is located west of the River Serein in the village of Chablis, Burgundy, and is one of the largest Premier Cru vineyards in the greater Chablis region. Its most special feature, however, is the rare soil, called Kimmeridgian, which is a mixture of limestone and clay, which creates a very special terroir. This results in the production of wines of exemplary quality with the purity of fruit, crisp acidity, and particular elegance, which of course you can keep for years in your cellar, but are just as enjoyable even young!
 
Raoul Gauthier et Fils winery has a huge history in Burgundy winemaking and was established in 1950, but the vineyards it cultivates date back to 1585! The knowledge of the old and the innovations in winemaking, brought the winery today, in a position to produce Petit Chablis, Premier Cru, and Grand Cru, and in fact, some of the most popular worldwide. For Chablis 1er Cru Vaillons, Raoul Gautherin the Chardonnay came from 6 different plots with an average age of 43 years, which fermented in stainless steel tanks. Then, the juice remained in contact with the lees for 15 whole months, without batonnage and the result is a very well-structured wine, with an intense character and a rich aromatic dimension.
 
Raoul Gautherin Chablis 1er Cru Vaillons is a wine worth treating yourself to and a must-have in your collection. The number of bottles is very limited!

Tastes Like
In the glass, it is moderately lemony. Strongly aromatic with fresh aromas of kumquat, lemon zest, and lime. Soft notes of white jasmine flowers, peach, orange blossom, and white pepper, combine very nicely with its very special minerality.
 
In the mouth, it has a medium (+) body, with a nice crisp acidity. Neroli, quince, lemon zest, fresh apricot, and peach blossoms, in balance with aromas of brioche and butter. The minerality gives an extra complexity and creates a very special and enjoyable long-lasting aftertaste.

PAIR IT

Pair it with lobster pasta, salmon with white sauce and sushi

Steamed mussels with white wine and black pepper

  • 1 kg mussels, whole (with shell) cleaned and scraped. Alternatively prefer frozen
  • Freshly ground black pepper
  • 1 clove of garlic chopped
  • 3 tbsps. of finely chopped fresh parsley
  • 1 glass of white wine, preferably Assyrtiko

Place the mussels without water in a large saucepan or pan on a high heat and add plenty of pepper. Cook for about 5 minutes until they open. Throw away mussels that will remain closed. Pour in the wine and leave it for a 1 minute in the heat until the excess of liquids is reduced.

Drain the mussels and hold the liquid left in the pan. Place the mussels in a deep platter. Drain the liquors from the mussels and pass them through a cheesecloth and then put them in a small bowl. Add the parsley to the bowl, stir, pour the mixture over the mussels, and serve.
