Vaillons is located west of the River Serein in the village of Chablis, Burgundy, and is one of the largest Premier Cru vineyards in the greater Chablis region. Its most special feature, however, is the rare soil, called Kimmeridgian, which is a mixture of limestone and clay, which creates a very special terroir. Raoul Gauthier et Fils winery has a huge history in Burgundy winemaking and was established in 1950, but the vineyards it cultivates date back to 1585! The knowledge of the old and the innovations in winemaking, brought the winery today, in a position to produce Petit Chablis, Premier Cru, and Grand Cru, and in fact, some of the most popular worldwide. For Chablis 1er Cru Vaillons, Raoul Gautherin the Chardonnay came from 6 different plots with an average age of 43 years, which fermented in stainless steel tanks. Then, the juice remained in contact with the lees for 15 whole months, without batonnage and the result is a very well-structured wine, with an intense character and a rich aromatic dimension.
