Adrianna Catena, daughter of Nicolás Catena, along with Alejandro Vigil, chief winemaker at Catena Zapata Winery, decided to create their own winery in Argentina — El Enemigo.
Their Chardonnay is a truly unique wine, aged for 9 months in French oak barrels (35% new) with the presence of flor. In case you're wondering, flor is a thin layer of yeast that forms on the surface of the wine, protecting it from oxidation. This technique is widely used in Spanish Sherry! Flor imparts a distinctive aromatic character to the wine, reminiscent of mushrooms and dough. Combined with the complexity from the barrel and the sharp finesse of a Chardonnay grown at 1,400 meters of altitude, it’s no surprise the wine scores sky-high every time!
