Greece's wine scene has made leaps and has begun to innovate at all levels. Two wineries that perfectly express the terroir of their regions and perfectly convey the typicality of their varieties, have decided to make the most delicious partnership! Bosinakis Winery, known for its mastery in the vinification of Moschofilero and the Syros Winery, with Nikos Hatzakis having made us see Syros with a different eye, through his Assyrtiko, decided to vinify two opposed varieties and give us proof that yes, after all, heteronyms attract and cause great wine explosions!
In the blend, both varieties participate in a percentage of 50%. The microclimate in the area where Moschofilero comes from, is the most ideal in the whole of Mantinea, while the roots of Assyrtiko are among the oldest on the island of Syros, almost 35-40 years old. The harvest takes place in different periods, mid-October for Moschofilero and early August for Assyrtiko. Each variety is fermented separately with indigenous yeasts, in stainless steel tanks and remains in contact with the lees for about 3 months each. Then and after mixing them, the blend remains with the lees for another 5 months.
If you are not a very close friend or relative of one of the two winemakers, we would advise you to make a bottle of your own now, because the wine is only bottled at 1400 bottles!
