The Hungarian minerality, specifically that of Tokaj, welcomes you from the first sip in MAD Dry by Tokaj and can whet your appetite for seafood, just like a nice Santorini. Behind this wine is the MAD team!

Winemakers with passion and passion, started a "Mad" project in 2009, with the aim of highlighting the entire region of Tokaj. It is one of the oldest wine producing regions in Europe, with many different styles of wine, from dry to the world's most famous sweet wines! The particularity is found in the volcanic soils, which give the ultimate expression of minerality. MAD understood very early on that cooperation with local producers was necessary. And they did just that. The local winegrowers entrusted the care of their vineyards, from "top to toe", to the MAD team, which's eventually became her favorite hobby and the result was unique!

MAD Dry by Tokaj was made mainly from Tokaj's traditional variety, called Furmint, while a small percentage of highly aromatic local varieties were added to enhance its aromatic character. These are Hárslevelű and Sárgamuskotály, but don't bother pronouncing them! MAD Dry by Tokaj was harvested by hand and fermented with native yeasts. Tastes Like

It is lemony in the glass. The aromatic intensity on the nose is moderate with the minerality standing out from the first moment. Fresh citrus fruits, mainly lime and some subtle unripe stone fruits complete the whole with accompanying minerality.

In the mouth it is equally fruity and mineral, balanced with characteristic acidity and a moderate aftertaste that has a mineral character.

DRY BY TOKAJ 2019 - MAD WINES

PAIR IT

Pair it with fava, fried anchovies, or green salads with fruit.

Kakavia (fish soup)

  • 1200 g small fresh fish for soup (tip: use different fish)
  • 250 g potatoes
  • 2 medium sized onions
  • 100 ml of olive oil
  • 2 lemons
  • Salt, preferably sea salt
  • 6-7 black peppercorns
  • A little hot chili pepper (optional)

First gut the fish and remove the scales. Cut the potatoes in a symmetrical way and slice the lemons.

Saute the potatoes in a deep pot with olive oil. Score the onions slightly from the underside and pour them into the pan stirring for 2-3 minutes.

Pour in the juice of one lemon. Add a little salt, pepper, chili pepper (optional), pour 600 ml. water and allow the mixture to boil for about 8-10 minutes.

Then place the fish in the pot and simmer for about 10 minutes without shaking.

Remove the pot from the fire, pour in the juice of the other lemon and shake the pot carefully to prevent the fish from crumpling. Let the soup cool down for 10 minutes before serving.

 

At a platter serve the fish with the potatoes and onions and season them with olive oil. Serve the soup in deep dishes.
