Why do we love it?

Mikros Taraxias from Thalassinos Microwinery is a juicy Vidiano, which contrary to what its name states, is the best child of Heraklion. Balanced with structure and character that brings out the variety in the most natural way.

Thalassinos Microwinery is located in Finikia, just 9km outside of Heraklion, Crete. There, two young people, Isidoros Thalassinos and Virginia, who belong to the 4th generation of winemakers, decided to continue the tradition but let nature show them the way. Only the best vineyards in the area are cultivated for the production of wine and in fact, they are an example to follow since they follow the Permaculture method. If the word seems unfamiliar to you, it is the science of planning autonomous and healthy ecosystems, which aims at the harmonious coexistence of all the organisms that live in them, to maintain the same quality for future generations.

The grapes for Mikros Taraxias were harvested exclusively by hand, as were most of the operations during their vinification. The energy footprint was almost zero and only spontaneous yeasts were used for fermentation, in stainless tanks and clay containers. Of course, the result showed that nature returns the favor since the potential of the variety was perfectly captured. His short stay with the grape skins as well as his 10-month stay with the fine lees made the characteristics of Vidianos shine!

Mikros Taraxias 2020 is the wine you can have every day on your table, so you better stock up on a few (several) bottles so you don't run out.

Tastes Like

Bright lemon color in the glass. Floral aromas of evening primrose, blossoming almond tree, and impressive aromas of apricot, mango, bergamot, peach, and lemongrass. After a while the aromas of freshly baked brioche and smoke come to the surface.

In the mouth it has a full body, with refreshing acidity. The aromas of lemon jam and ripe peach make up a very tasty and juicy wine with a long aftertaste.

Excellent pairing with grilled seafood, fish, sweet and sour chicken, or rich cheeses.

Stuffed lamb cooked in vine leaves

For the lamb roll


4000 gr. lamb leg, deboned
1 package of vine leaves
3 grilled peppers 
300 gr. kefalograviera
Freshly ground pepper
Salt

For the marinade


5 cloves of garlic
4 tablespoons dill
4 tablespoons parsley
1 tablespoon fresh thyme
1 spring onion
80ml olive oil
Freshly ground pepper
Salt

In addition, we will need


Baking sheets

In a blender, mash all the marinade ingredients.

Season the lamb well on all sides and spread the marinade on the inside.

Spread 2-3 sheets on your counter, which will fit the lamb, spread the vine leaves and place the lamb above them.

Fill the peppers with the cheese, place them in the middle and wrap in a roll, lifting the oil sheet with the vine leaves.

Close well, place the roll in a baking pan and bake in a preheated oven at 180o C for 4 hours.

Serve the roll hot or at room temperature.

Extra tips

-We can fill the lamb with any filling we like such as rice or pine nuts
-If we do not like dill, we skip it
