Gabriëlskloof winery, located in the scenic Bot River region of South Africa's Western Cape, is the lifelong dream of South African businessman Bernhard Heyns, who has been searching for the ideal spot for years. Luck brought him in front of a wheat and sheep farm and the unique possibilities of the landscape flashed before his eyes. So in 2001, he bought a piece of land, which he gradually began to plant with the now highly acclaimed vineyards of Gabriëlskloof Winery, named in honor of his father, Gabriel. Today it is a model for sustainable winemaking practices, its excellent architecture, natural pest control, and responsible water management, which overall minimize the ecological footprint while keeping the land alive for future generations.

There the cool airwaves from the Atlantic create the perfect conditions for the Sauvignon Blanc to acquire lively acidity and intense flavors of fresh fruit. The winery has vineyards with different soil compositions and microclimates, and their blending creates a complex and well-balanced result, some of South Africa's top bottlings to be exact!

For Sauvignon Blanc, the harvest is done manually, during the period of optimal ripening of the grapes, which are stored very carefully. They are then gently pressed to extract their pure juice. Fermentation takes place with wild yeasts in stainless steel tanks under controlled temperatures, which keep the fruit flavors lively. Aging for 7 months on lees adds complexity and texture not easily found.

Serve it in your glass and you'll be instantly transported to the sunny vineyards of the Western Cape. South African wines have already become the next big thing and when you taste the Sauvignon Blanc from the Gabriëlskloof winery, you will find out why.

Tastes Like

Into the glass it has a pale straw color with green highlights. On the nose, it is particularly enticing with aromas of citrus blossoms, lemon, orange, grapefruit, jasmine, and freshly cut grass lending intense freshness. Tropical fruits, mango, freshly cut pineapple, and passion fruit, enhance its youthful energy.

In the mouth, it has lively acidity and intense flavor characteristics that follow the aromas of the nose. Passion fruit, lime, ripe grapefruit, and green apple add complexity, while subtle minerality gives a sense of purity, freshness, and revitalization.

PAIR IT

Excellent pairing with seafood, especially grilled shrimp, scallops, oysters, and ceviche. Also pair it with goat cheese, asparagus dishes, and light vegetarian cuisine.

Salad with smoked trout, green apple and herbs

For the salad
1 pack of mixed lola and arugula salad
1 fillet of smoked trout
1 green apple
1 finocchio
3 radishes
3-4 walnuts
trout eggs, optional

For dressing
2 green onions
15 gr dill
10 g fennel
1 clove of garlic
20 ml. vinegar of white wine
1 lemon
40 ml. olive oil
Freshly ground pepper
Coarse salt

Prepare the dressing: In a food processor (multi), mix all the ingredients for the dressing, by adding the olive oil in the end, while tasting and seasoning.


Finely chop the finocchio, chunk the green apple and the two radishes, put them in a bowl and add half the quantity of trout fillet, which you have crumbled with your hands.


Pour half the amount of dressing, mix and place the fish salad in the fridge. Cut the other radish into thin slices and place the salad in a serving bowl and sprinkle with the dressing.


Add the already prepared fish salad, the remaining tout fillet, the radishes, the walnuts and the trout eggs. We garnish with plenty of dressing and serve.

Notes:
- Instead of smoked trout you can use any other smoked fish
- In the salad you can add orange
