Gabriëlskloof winery, located in the scenic Bot River region of South Africa's Western Cape, is the lifelong dream of South African businessman Bernhard Heyns, who has been searching for the ideal spot for years. Luck brought him in front of a wheat and sheep farm and the unique possibilities of the landscape flashed before his eyes. So in 2001, he bought a piece of land, which he gradually began to plant with the now highly acclaimed vineyards of Gabriëlskloof Winery, named in honor of his father, Gabriel. Today it is a model for sustainable winemaking practices, its excellent architecture, natural pest control, and responsible water management, which overall minimize the ecological footprint while keeping the land alive for future generations.
There the cool airwaves from the Atlantic create the perfect conditions for the Sauvignon Blanc to acquire lively acidity and intense flavors of fresh fruit. For Sauvignon Blanc, the harvest is done manually, during the period of optimal ripening of the grapes, which are stored very carefully. They are then gently pressed to extract their pure juice. Fermentation takes place with wild yeasts in stainless steel tanks under controlled temperatures, which keep the fruit flavors lively. Aging for 7 months on lees adds complexity and texture not easily found.
