Why do we love it?

Skytali from Hatzidaki Winery is a wine with an allegorical name, which moves us equally, both for the content and the story behind it. The miraculous terroir of Santorini and the inexhaustible talent bequeathed to the next generation closed in a bottle, a complex wine with enormous specific gravity.

Haridimos Hatzidakis was a huge wine genius, who touched the island's winemakers both in the soul and in the art of wine like no one else. Those lucky enough to work with him (or rather, to accompany him on the vine road) were introduced to his artistic approach to winemaking. His talent changed the logic of the most important zone of Greece and placed it on a completely different step of the podium than it was then.

In the year of his last harvest, a portion of the wine, intended for a simple Santorini, remained a little longer in contact with the lees due to the loss of Haridimos. This determined the continuation of his work by the new generation, who decided to continue bottling the wine in exactly the same way, capturing the exact image that Haridimos had for Santorini: intense, rich, and uniquely mineral.

The Skytali barrel remains in contact with the lees for 12 months and then matures for another 12 in French oak barrels. The wine is bottled in a magnum bottle unfiltered, which fully exploits the terroir of the island's unique vineyards and creates a divide if you have the strenght to resist and age it. 

With admirable aging potential, the wines of Haridimos make us wine proud and write their history over time.

Tastes Like

In the glass it is golden. Rich aromas of lemon oil, orange, lime, sweet bergamot, ripe peach, apricot jam, with notes of honeysuckle, honey, honeycomb and wet stone.

In the mouth it has a full body and a strong acidity. Lemon, bergamot, ripe peach, brioche, honey, honeycomb in an intense frame of tsakmakopeta, create a long-lasting aftertaste and a complex and very enjoyable result.

Enjoy fatty grilled salmon, lemony goat in the oven, and grilled fatty fish

Stuffed veggies with couscous

For stuffing
- 250 g couscous
- 3 fresh onions
- 1 dry onion
- 2 cloves of garlic
- 1 small bunch of parsley
- 2 tablespoons of black currants
- 2 tablespoons pine nuts
- 40 ml. olive oil
- 150 ml. tomato juice
- Freshly ground pepper
- Salt

You will also need:
- 4 tomatoes
- 4 zucchinis
- 4 green peppers
- 60 ml. olive oil
- 100 ml. tomato juice
- Freshly ground pepper
- Salt

Cut and remove the lids from the veggies and empty the interior.

In a large bowl, finely chop tomatoes, parsley, onions and garlic. Add tomato juice, pine nut, raisins, salt, pepper and 40 ml. olive oil, mix and add the couscous and 50 ml. water.

Stuff the vegetables and place them in a large saucepan next to each other. In a bowl, mix 60 ml. olive oil, 100 ml. tomato juice, 150 ml. water, salt-pepper and pour over the veggies.

Place the saucepan on medium heat, for 3-4 minutes and then simmer for about 35 minutes, until the vegetables are softened or when the juices run out. Let cool and serve or you can eat it cold.

Notes
- You can add in the pot and a couple of potatoes cut into chunks.
- You can make it in the oven too.
- Pine nuts and raisins can be omitted.
