Why do we love it?

YOU HAVE NOT TASTED ANYTHING LIKE THIS BEFORE! Yes, you may have heard it again, but we absolutely mean it. Spira from Ktima (Domaine) Ligas is a unique wine that raises the standards for all the rest of Xinomavros out there. Why? Because it is a blanc de noir Xinomavro which ages with the Solera system (YES INDEED)!!!

And now that we have your attention, prepare for some serious information about Spira. Originally, behind this wine lies the unstoppable and inventive Ktima (Domaine) Ligas. They constantly experiments with new vinification techniques and with the "limits" of Xinomavro. Their philosophy in wine is summarized in the following: permaculture *, no interventions in wine, no sulfites, no added commercial yeast. Spira 2022 contains essentially wine from 2012 until 2022 and every year it is bottled in limited quantity. The wine ferments in a stainless-steel tank and then it matures in large used oak barrels of Solera. The result is at least impressive and uniquely complex. As its creator says Spira is a gastronomic wine that surprises with its incredible structure.

 

* Permaculture took its name from permanent agriculture and concerns a way of cultivation that ensures a sustainable life cycle. In simple terms, the cultivation of the vine does not compete with nature but works with it for the purpose of sustainability and stability of the environment.

Tastes Like

It has medium golden color with copper hues.

Complex nose with aromas of white cherry, quince, orange, peach compote, tomato, dried cranberry, but also with a sense of minerality. Earthy notes give extra complexity to the aromatic bouquet that is constantly evolving into the glass.

On the palate, it has medium body, refreshing acidity and mild tannins. It has an impressive concentration and sensual, creamy sensation. The aromas of the mouth follow those of the nose, most notably this of white cherry. Never ending finish.

Pair it with pork stew with oranges, tenderloin with wine sauce, pasta with sun-dried tomatoes, stuffed squid on the grill, lentils salad citrus vinaigrette.

Stuffed chicken roll with quince and potatoes in the oven

  • 1 stuffed chicken roll
  • 1kg potatoes cut into small pieces
  • 500 gr quince cut into thick slices
  • 2 lemons (juice and zest)
  • 1 onion
  • 2 cloves of garlic
  • 2 tbsps. Dijon mustard
  • 1 tbsp. curry powder
  • 1 tbsp. fresh oregano
  • 1 tbsp. fresh thyme
  • 1/2 cup of olive oil
  • Salt and pepper
  • 600 ml of vegetable stock

Preheat the oven to 250 ° C. Add the olive oil to the casserole, then the chicken roll, the cut quince and the potatoes.

Mix the remaining ingredients with a small portion of the stock and pour the mixture on the roll and potatoes. Add stock so that the mixture covers the potatoes.

Cover the casserole and, after lowering the oven to 150 ° C, put it in the oven. From time to time we open the casserole and check whether we need to add some water.

Once ready, uncover the casserole and raise the oven temperature. Leave it there until it's golden brown.
