Debina Orange you've never tried before. But you have to!
We've been waiting a long time for this to happen. What we did not expect, however, is that this particular variety would give a wine with such a structure and complexity, unlike any we had tasted so far. An even more explosive and delicious Debina, in a very expressive orange wine, of course under the care of Panos Jimas.
All the wines we have tasted from his hands have something unique. Their balance and finesse reveal that his relationship with wine and winemaking may be ultimately karmic. A chemical oenologist, he started in 2013 to create his vineyard in Kalomodia, Artas, while at the same time attending the WSET Diploma, one of the most important titles in the world of wine, which he obtained a few years later. His innovative ideas are always noisy, as is his project "Les Vignerons", which concerns his collaboration with local producers to highlight the characteristics of the variety, the year, and the place.
For Trois Chapeaux, grapes were used from vineyards over 30 years old, tended by Mr. Stefanos Sioumalas, in the village of Sakellarico. On the slopes located 350 meters above the Kalamas River, the cold climate and the cool breeze perfectly ripen Debina, which, combined with the soils of the area, acquires a very refreshing acidity. 45% ferments in amphora, 31% in new oak barrels, and 24% in stainless tanks, resulting in a crystalline expression of fruit, with intense freshness and amazing structure that constantly evolves in the glass.
We saved the best for last. The 11 months in contact with the lees create a balanced creamy sensation, which rounds out Debina and gives a taste so delicious, that you want to eat it with a spoon! If you're with your company and someone says the word "culinary wine", that's exactly the time you have to show off a Trois Chapeaux!
