Why do we love it?
With your eyes closed, you think that you are drinking a fine Xinomavro, and as soon as you open them… boom! You're drinking Xiropotamos 2022 from Domaine Tatsis, a wonderful white wine from Xinomavro!

We will tell you a story about two guys. Two brothers who are definitely the most rock (almost heavy metal) wine producers in Greece. Two guys that have parted ways with commercial yeasts, conventional and predictable vinification. Their intervention in their wines is at the level of friendly backlash.

That's exactly the case with Xiropotamos 2022. The red Xinomavro was unconventionally vinified by the blanc de noir method, with the immediate removal of the skins from the must to prevent it from being colored (almost). So, the resulting wine is white. The wine ferments with indigenous yeasts, matures for about a year on its lees contact and it is bottled unfiltered. Xiropotamos 2022 is a complete and special wine that has fanatical friends around the world.

Tastes Like
Xiropotamos 2018 Domaine Tatsis has a pale golden color with orange hues. It has moderate (+) aromatic intensity, which clearly indicates its "Xinomavro" origin with notes of sweet tomato and white rose. Candied quince, orange, bergamot, apricot, gardenia, honey, toast, and Turkish delight are popping out of the glass.

On the palate it is medium (+) bodied, with refreshing acidity and light tannins. Sweet notes of citrus blossom, sundried tomato, honey, grapefruit, gardenia, ginger, and white tea create a delightful and unique bouquet.

XIROPOTAMOS 2022 - DOMAINE TATSIS

PAIR IT

Pair it with stuffed vegetables, stuffed cabbage rolls, chicken with orzo and tomato sauce, or linguine with sun-dried tomato pesto.

Spaghetti with sun-dried tomatoes, pecorino and basil

500g wholegrain spaghetti 
150g of sun-dried tomatoes
150g of pecorino
20g black raisins
1 clove of garlic
6-7 basil leaves
6-7 cherry tomatoes
80ml olive oi

Boil plenty of water in a large saucepan, add generous doses of salt and cook the spaghetti for 6-8 minutes. Drain them and keep a cup of the pasta water.

Put the sun-dried tomatoes, raisins, garlic, basil leaves, half of the pecorino and olive oil in the blender.

In a large frying pan put the pesto you just prepared, add the pasta and half of the pasta water, mix well and if necessary add a little more pasta water.

Add some freshly ground pepper, the cherry tomatoes cut in two, 2-3 tablespoons of pecorino and remove from the heat.
Serve with basil leaves and pecorino.

Recipe Notes:
- If you use dried sun-dried tomatoes soak them in water or in the olive oil you will use
- In addition to raisins we can add 2 dried dates
- You can also add some fresh thyme
