Trikalinos is a family-run business. The roe comes from the eggs of the female head or otherwise, buffalo, which are pickled and then air-dried. It all started in 1856, when the brothers Zafiris, Nikos, and George started dealing with bottarga. Today, in their state-of-the-art facilities, they make perhaps the best bottarga in Greece and in the world. It is no coincidence that it is on the menu of some of the best Michelin - starred restaurants in the world!
It has a firm texture and a rich, sea-flavored taste. You can enjoy it simply by removing the wax and cutting it into thin slices. You can also add it to pasta and risotto at the end of cooking.
