Cambozola is a German cheese made from cow's milk in the Allgau region. Triple cream is its base, like Camembert, except that they also inject it with Penicillium roqueforti mold, used in Roquefort and Gorgonzola.
It has a rich flavor, with nutty and savory notes. We would recommend you to spread it over warm, toasted bread and drizzle some honey over it! Ideally, it is paired with sweet, late harvest, wines, and rich white wines from Gewurztraminer, Roussanne and Pinot Gris, especially if they are 2-3 years old.
