Cretan Apaki consists of fine pork that is cured, seasoned with herbs from the Cretan land, and smoked, acquiring rich aroma and flavor. In Crete, they eat it plain, with raki but we have many other, interesting suggestions.
At first, you can sauté it with mushrooms, peppers, and lemon for a slightly different stir-fried pork. White and oak-aged wine, ideally from Assyrtiko or Sauvignon Blanc, is the ideal pairing. Secondly, you can add it to omelets instead of bacon, with epic results. In this case, prefer Champagne or a special orange wine. And finally, you can make an alternative Cretan carbonara using apaki and Cretan gruyere. Here you might prefer an oaked Vidiano or a blend of Kotsifali or Liatiko.
