Mimolette was made by the French in response to the Dutch Edam when they were at war and banned the import of Dutch products. Mimolette Vieille 12 mois is made from cow's milk and matures for 12 months in natural cellars. It owes its orange color to the addition of carotene and its production process is similar to that of Gouda. It has a rich taste that balances between sweet and savory, and crunchy texture.
It uplifts any cheese plate but can also be grated and added on risotto and pasta with creamy sauces. Combine it with a rich, buttery Chardonnay but also fruity red wines from Barbera or Sangiovese.
