The Ponte Reale farm is located in Bourbon, known as one of the most magnificent and authentic sites in the whole "Kingdom of the Two Sicilies". It was here, at the border between the regions of Campania and Molise, that King Ferdinand IV, who suffered from very poor health, came to restore his power by horseback riding and hunting. It is from these amazing lands that their famous Mozzarella is born.
Mozzarella is a fresh, light Italian white cheese that can please anyone.
Rich in low fat and salt, it is ideal for many different recipes with the most classic of all Caprese salads, namely tomatoes, mozzarella, extra virgin olive oil, and basil or pesto basil. If you want to live a bit like a Sicilian then you can enjoy it in a salad with green beans, cherry tomatoes, olive oil, olives, and balsamic vinegar.
It prefers light, white wines from varieties such as Sauvignon Blanc and Malagouzia that will emphasize its creamy and herbal nature. Next to Caprese, you could lovely pair an elegant rose wine based on Grenache or Xinomavro.
