From cow's milk, aged for at least 4 months but usually, its aging reaches 12 months. The cheese has a firm texture reminiscent of Parmesan and a very intense taste and aroma.
There are two very different choices for wine pairing: sweet wines or bold reds. In the first case, we serve San Michali with dried figs, raisins, walnuts, and honey and drink a sweet wine from Romeiko. In the second scenario, we serve it with fresh figs and drink an exuberant Mavrodaphne.
Bonus tip: Soak sun-dried tomatoes in water, until soften and fill them with a small piece of San Michali. Dip them in batter and fry them. Open an aged Assyrtiko or a Goumenissa.
