For Noughty Rouge, the Syrah grapes come from dry-grown vines in the Darling region of South Africa, where the vineyards are exposed to warm sunshine and cooling from the Atlantic Ocean, resulting in a very good ripening of the grapes that leads to aromatic intensity. After fermentation, the wine, using the cone-rotating vacuum method, reaches only 0.5% abv, while maintaining its volume and flavor. This is also helped by the fact that it remains in third- and fourth-use French and American barrels for about 8 months.
