Their pride and joy, the Brut Cuvee Speciale, is produced from selected Xinomavro and Assyrtiko vines older than 40 years, cultivated with organic and biodynamic methods near lake Vegoritida. The second fermentation takes place in the bottle with the traditional method of Champagne (méthode traditionnelle), which can be costly and tiring, having to manually rotate the bottles every day, but it rewards them with wonderful autolytic aromas and flavors that make Brut Cuvee Speciale by Domaine Karanika truly unique.
