Why do we love it?

The essential ingredient for the making of proper sparkling or semi-sparkling wine is the naturally high acidity of the grape and its low alcoholic volume. The indigenous variety of Zitsa area has got both!

With this as raw material and applying the Méthode Charmat - with carrying out the second fermentation in closed tanks (cuvée close) - Debina obtained refreshing bubbles, very persistent for semi-sparkling wine and refined aromas which will leave you speechless.

Realizing the potential of Greek varieties for the production of sparkling wine, the historic wine-maker Lefteris Glinavos, one of the first oenologists in Greece, has experimented with Debina and was rewarded with a great wine!

Tastes Like

In the glass, its color is hay-yellowish with delicate, thin but persistent bubbles.

In the nose, delicate aromas of citrus trees are combined not only with herbal allusions of oregano, sesame but also with dough aromas, light sense of tobacco, and chalk.

In the mouth, the bubble looks more intense, and with the beautifully balanced acidity contributes to the refreshing character. The delicate fruit and dough sense is expressed in the mouth too and lingers there in an especially enjoyable long-lasting aftertaste.

with fish, shellfish, cool salads or sushi.

Steamed mussels with turmeric

  • 700 g mussels
  • 1 green onion, chopped
  • 1 Garlic, chopped
  • 1 tsp.  turmeric
  • 1 glass of white wine
  • Olive oil
  • Salt (Optional)
  • Pepper

Wash the mussels under plenty of water, removing the sand and seaweed and thoroughly cleaning the shell.

Saute the onion and garlic and add the mussels. Then add 1 tablespoon sweet turmeric and one glass of wine. Let the alcohol evaporate a little and cover the pot to boil for 5'-6 '.

Agitate the pot, remove the cover and serve on a deep dish.

Add freshly ground pepper (salt is optional) and garnish with a sprig of fresh thyme.

TIP: During the wash, throw the open mussels. After cooking,  throw the closed mussels.
