The story of the Ca' Del Bosco winery is like a fairy tale. Ca' Del Bosco's history began in the mid-1960s when Annamaria Clementi Zanella bought a small house on Erbusco, on a hill also known as "Ca' del bosc" and surrounded by chestnut forests. Maurizio Zanella, the son of Annamaria, saw in Franciacorta the land that would "produce" the best grapes. And he was not wrong since his winery was the first and best expression of the potential of the region.
Maurizio acquired great expertise in sparkling wines next to the best in Champagne. So, when he returned to Franciacorta, he knew very well what to do to create great wines, and Ca' Del Bosco Franciacorta Cuvee Prestige is definitely one of them. The blend consists of Chardonnay, Pinot Nero, and Pinot Bianco that are vinified separately, matured for 7 months, and then blended together with old vintages before entering the bottle for the second fermentation. The wine matures for 25 months (sur lattes) in the bottle before the disgorgement takes place.
The result is creamy, complex with intense aromas of brioche, hazelnut, lemon, and white flowers.
Put it next to aged cheeses and fine cold cuts or bottarga!
Tastes Like
Ca' Del Bosco Franciacorta Cuvee Prestige has medium lemon color and elegant aromas of brioche, lemon, green apple, honeysuckle, lemon blossom, pineapple, hazelnut, and pear.
In the mouth, it has medium body, refreshing acidity, and creamy mousse. Dough, biscuit, dried nuts, candied lemon peel, pear, grapefruit, honey, and peach fill-up the mouth with every sip.
