Kompsos Rose - Karavitakis Winery is one of the most delicious Greek rose wines we‘ve come across this year. The finest red variety of Crete, Liatiko, in the hands of Nikos Karavitakis gives a delicate rose wine that overflows with elegance!

Nikos Karavitakis has undertaken to continue the brilliant work of his father, Manolis. Manolis Karavitakis was and is an emblematic figure for Cretan wine. With studies in Italy, he brought an air of renewal to Crete. When he returned, he brought ideas that were radical for the time and made noise. The bet for Nikos was big, he had to continue at this level while aiming higher. And how can you continue worthily the work of the man who first planted in Crete Negroamaro and Sangiovese? You deal with the most demanding and at the same time impressive red grape variety, Liatiko.

After Kompos red, he decided to make a rose version from Liatiko. For the ultimate expression of elegance, Nikos chose to let Liatiko speak on its own, with a very short maceration period and a three-month maturation with lees contact. The result has elegant color and impressive fruit purity, dressed with discreet floral notes and toffee touches! Just perfect!

Tastes Like

Kompsos Liatiko Rose Karavitakis Winery has bright salmon color and elegant aromas of strawberry, cherry, watermelon, peach, pink grapefruit, dried cranberry, cotton candy, rose, and jasmine.

In the mouth, it has medium (-) body, balanced acidity, and a subtle oily sensation. Juicy strawberry, raspberry, pomegranate, white cherry, bitter orange, pink grapefruit, watermelon, white flowers, and bubble gum compose a delicious ensemble.

PAIR IT

Pair it with penne with tomato and basil sauce, pizza margherita, sautéed shrimps with fennel, or a sea bass tartare.

Spaghetti with sun-dried tomatoes, pecorino and basil

500g wholegrain spaghetti 
150g of sun-dried tomatoes
150g of pecorino
20g black raisins
1 clove of garlic
6-7 basil leaves
6-7 cherry tomatoes
80ml olive oi

Boil plenty of water in a large saucepan, add generous doses of salt and cook the spaghetti for 6-8 minutes. Drain them and keep a cup of the pasta water.

Put the sun-dried tomatoes, raisins, garlic, basil leaves, half of the pecorino and olive oil in the blender.

In a large frying pan put the pesto you just prepared, add the pasta and half of the pasta water, mix well and if necessary add a little more pasta water.

Add some freshly ground pepper, the cherry tomatoes cut in two, 2-3 tablespoons of pecorino and remove from the heat.
Serve with basil leaves and pecorino.

Recipe Notes:
- If you use dried sun-dried tomatoes soak them in water or in the olive oil you will use
- In addition to raisins we can add 2 dried dates
- You can also add some fresh thyme
