Why do we love it?
#Lou from Commanderie de Peyrassol is one of the most famous, very delicate, and aromatic rosés of Provence. But behind the wine parchments, hides a long history, which only a few estates in the whole of France have. Luxury color, exotic citrus fruits, berries, and a spicy touch, it is sure to bring the summer beaches one step closer to you!
 
The Commanderie de Peyrassol, founded in the 13th century by the Knights Templar, is located at the foot of the Massif des Maures in southeastern France. It has 900 hectares of vineyards located 220-350 meters above sea level and includes 13 different grape varieties, but mostly Cinsault, Grenache Rouge, Mourvedre, Syrah, Cabernet Sauvignon, and Semillon. And while they produce equally white and red wines, they put all their magic in their rosés, for which they have stood out among many wineries in the country, due to the age of the vineyards from which they are collected.
 
Lou is an organic rosé that has resulted from the collaboration of the Peyrassol house, with local producers, to highlight the best terroirs of the region. It includes 30% Grenache, 25% Cinsault, 20% Syrah, 15% Mourvèdre, and 10% Vermentino that were vinified in stainless steel tanks, to create a value-for-money rosé wine that you will consume almost obsessively and if you pair it with the Thai curry chicken, it will be simply fabulous!

Tastes Like
In the glass, it is soft salmon. Very delicate aromas of citrus zest, lime, and jasmine flowers, combine wonderfully with those of strawberry, stone cherry, and gooseberry.
 
In the mouth, it has a strongly fruity sensation, with cool acidity and aromas of pomegranate, strawberry, gooseberry, and spicy citrus notes.

PAIR IT

Pair it with spicy Thai dishes, spicy turmeric prawns, or light green salads with fruits.

Arugula salad with smoked salmon, avocado and roasted almond

  • 300 grams of arugula as fresh as possible
  • 200 g of smoked salmon
  • 50 g roasted almonds
  • an avocado, thickly cut
  • a little dill
  • a little fennel
  • 50 g of oil
  • 2 lemons
  • a little orange juice
  • salt
  • pepper
  • three types of peppercorns: green, red, black

Cut salmon in strips. Marinate for 3 hours in the refrigerator, in a bowl of lemon juice, finely chopped dill and fennel, pepper and a little olive oil. Mix by hand to combine all the ingredients.

Chop the roasted almonds.

Put the peppercorns in the mortar and break them lightly to release their aromas.

In a large salad bowl, cut the arugula in large pieces, add the avocado, pour over the salmon strips and sprinkle with pepper and roasted almond.

While serving, sprinkle with a dressing of: lemon, salt, a little orange juice and minimum olive oil, that we have previously mix well.
