Why do we love it?

With Mountcloud Navitas Winery you will fly into the clouds. Its elegance, delicate strawberry aromas and spicy character will win you over from the very first sip. Light and juicy, it is ideal as an aperitif but also to accompany summer appetizers!

The history of the winery began in 2015 when Maria Dimitriadou came up with the idea to use the family vineyard in Litochoro, at the foot of Mount Olympus. Maria, a psychologist by profession but inextricably linked to wine since she was a child, could not escape the "wine flu". So, she joined forces with the oenologist Grigoris Sotiriadis and in 2020 they had their first harvest. Their wines managed to stand out from the very first moment, both in global competitions and in the Greek market, for both their impressive packaging and quality. In second reading, however, there is something else that makes Navitas Winery stand out. Apart from the vegan certification, they have already started the procedures for the certification of organic farming while at the same time the winery operates with the logic of sustainable energy (70% of water is recycled, they do not use synthetic fertilizers, they try to reduce energy consumption to a minimum).

Both great wines and ecological consciousness? Hell yeah! And if you do not believe us, try Mountcloud Navitas Winery. It is a rosé wine from Grenache Rouge. The grapes come from the privately owned vineyard, at an altitude of 280 meters, with extremely low acreage yield. After the strict sorting and the short pre-fermentation maceration, the wine ferments in stainless steel tanks, at a controlled temperature, in order to ensure its finesse and freshness.

MOUNTCLOUD 2023 - NAVITAS WINERY

PAIR IT

Pairs very well with caprese salad, grilled shrimps with orange vinaigrette, chicken skewers with lime, soy sauce and ginger

Shrimps wrapped in prosciutto, with orange marmalade

  • 1/4 cup orange jam
  • 1/4 cup of white dry wine
  • 4 tsps. of fresh lemon juice
  • 1 tsps. of finely chopped ginger
  • 1 large clove of chopped garlic
  • 2 fresh onions finely chopped
  • 20 shrimp jumbo or medium-sized peeled (you can leave the tail)
  • 10 slices of prosciutto cut into half lengthwise
  • 2 tablespoons of vegetable oil
  • 10 wooden skewers dipped in water for 20 minutes
  • salt
  • pepper

In a medium bowl, mix the jam, white wine, lemon juice, ginger, garlic and onions. Add salt and pepper according to your taste.

Tosh the shrimps in the bowl and turn them to get fully covered with the mixture. Leave them for 20 minutes at room temperature. After 20 minutes, drain the shrimps from  the marinade.

Roll each shrimp with a slice of prosciutto. Put 2 shrimps in each skewer and carefully pierce prosciutto so that it doesn’t  get unfolded.

Preheat the grill to medium to high temperature. If we barbeque them, we are careful to roast them in a moderate fire. Dip the skewers in the marinade and bake until the prosciutto gets crispy and the shrimps opaque and slightly reddish, about 3 minutes on each side.

Secret:

Soak the wooden skewers in water (preferably hot) before putting them in the oven or the charcoal so that they won’t burn and tan while baking.
