Did you know that Sicilians have a long tradition in sweet wine, the so-called Passito? Musita family winery in Salemi makes one of the most fragrant and delicious passito wines, the Passopasso Passito Zibibbo. The variety is Zibibbo or in other words Muscat. The warm, Mediterranean climate does its magic tricks for the perfect ripening of the grapes and the hot Sicilian sun does the rest. The grapes are left to dry in small crates, in ideal conditions, until the aromas and sugars are concentrated (appassimento method, hence passito). The rich juice is then fermented and matured in stainless steel tanks, under controlled conditions, so that all the intoxicating aromas of Muscat can be imprisoned in the wine.
