Glenallachie is a single malt whiskey distillery in Aberlour, Speyside, founded in 1967, producing mainly blended whiskies.
In this particular bottling, the maturation occurs in barrels that housed the Sauternes sweet wine, from the Graves region of Bordeaux. As you already know, this wine is made from Sémillon, Sauvignon blanc, and Muscadelle grapes, which were affected by noble rot through the fungus Botrytis cinerea, causing them to dehydrate and increase their sugar level. The casks were specially chosen to mature this whiskey and enhance it with the characteristic and very elegant aromas of Sauternes.
Light copper in the glass. Rich aromas of honeycomb, liquid caramel, and mocha, with hints of ginger and peach. In the mouth, tropical fruits such as pineapple, but in its smoked form, match uniquely with the characteristic flavor of coconut sugar. Long aftertaste of honey and orange marmalade.
