Nikos Doulofakis is the third generation of the winery and continues a family tradition that began in 1930. The family's vineyards were not spared from the phylloxera in 1977, while his father's vine replanting was the new chapter in quality cultivation. In 1993 Nikos, after his return from Piemonte, took over management and implemented new sophisticated pruning methods, changed the harvest season, and the combination of hard work and dedication brought the winery distinctions in many European and world wine competitions. The vineyards with a total area of 200 acres are located at an altitude of 350-450 meters, in Dafnes of Heraklion and include native and international varieties, while the microclimate of the area helps the grapes to ripen perfectly.
For Amphora Muscat, the Cretan variety Moschato Spinas was used which is a clone of the strongly aromatic Moschato variety, and is named after the community of Spina in Heraklion. The vinification took place in a clay amphora of 250-300 liters using the extraction method, which enhances the aromatic character of the wine, without the addition of yeasts and with minimal sulfites. It lasted for 3 months and after the separation, the wine remained for 2 more months in the vat, then matured for 4 months in stainless steel tanks. The wine was bottled without filtering and this justifies its cloudy color and the presence of sediment.
