Apla Oenops has been vinified by the well-known Greek wine veteran Nikos Karatzas and exudes authenticity! After his travels and his studies in Bordeaux, France, and after closing his collaboration with the Pavlidis Estate, he had an idea that constantly tormented him. So in 2015, he started his winery in Drama, under the name Oenops, which was also the newest in the region. How every year it claims a place in the list of the top 50 Greek wines and even in the top 20, we don't need to explain it to you. You will understand once you taste his wines!

Oenops cooperates with winegrowers and producers in different regions of Greece, from Soufli to Amyntaio and from Rapsani to Heraklion! With hard work in the vineyards throughout the year, the excellent quality of the grapes is a given. Apla Oenops is a blend of the defining varieties of northern Greece, Malagouzia, Assyrtiko and Vidiano from Crete, aging 12 to 45 years. A small percentage of whole bunches participate in the pressing, while the fermentation takes place in stainless steel tanks and amphorae. Its 2-month stay on the lees gives it extra volume and structure, which enhance its intense fruit aromas and refreshing freshness. And all these with an unbeatable quality-price ratio!

Tastes Like

In the glass, it is lively lemon green. It has great aromatic intensity and freshness, which comes from the aromas of citrus fruits and stone fruits. Lemon, lime, apple, apricot, and white-fleshed peach are intense, while a soft herbal character underlies, enhanced by the aroma of white flowers, citrus blossoms and light notes of brioche aromas.

In the mouth, it has similar aromas and a strong fruity character. It is of moderate intensity, with an equally fruity and balanced aftertaste.

Pair it with shellfish, fish or salads or chicken dishes with fruit sauce.

The Salad of Kalymnos - Mirmizeli

  • 2 tomatoes
  • 1 medium-sized cucumber
  • 1 medium sized eggplant
  • 1 barley rusk
  • 5-6 olives
  • 3-4 salt sardines or mackerel
  • 100 gr. Kopanisti cheese or equivalent cheese
  • Olive oil
  • Throumbi or oregano

Begin by cutting the eggplant into thick slices. Brush with some olive oil and bake in a medium heated oven until soft.

Remove the peel from the tomatoes.

Dampen the rust, lightly, and break it into chunks. In a bowl, cut tomatoes, aubergines and cucumber into even pieces.

Add olive oil, throumbi, kopanisti, according to your preference, and mix well.

Cut the fillets of the fish to 2-3 pieces, and add them to the salad. Serve the salad by garnishing with olives, a spoonful of kopanisti, and sprinkle with extra olive oil.
