After studying in the Mecca of wine, Burgundy, Sotiris shows that he is ready for great things.
Undoubtedly, Assyrtiko is the greatest white Greek grape variety, so he decided it was time to deal with it. A vineyard in Pera Meria, planted with Assyrtiko, was the basis for the winery's new wine. Sotiris wanted to make a rich and intense wine that could accompany difficult and complex dishes. So, he chose to macerate the must with the skins for 24 hours. This gave aromas and structure to the wine, which was fermented and matured in used oak barrels, for 8 months. The result has the spicy and smoky character of the barrel combined with the rich fruit and the crisp acidity.
