Why do we love it?

Albert Bichot’s Chablis 2022 is an excellent way to comprehend this unique terroir, characterised by its distinctive, marine fossil-rich soil (Kimmeridgian), all while staying within a reasonable budget. And to top it off, Wine Spectator awarded it a well-deserved 90 points!

The Bichot family is one of the most recognizable and respected families in the world of wine, with a rich history that dates back to 1831. Their excellence in vineyard management has placed them on the list of the most important producers in Burgundy for about 190 years, with vineyards in the Côte de Beaune and Côte de Nuits as well as Chablis. Albéric Bichot, who has been at the helm since 1996, has taken care to upgrade the entire process by adopting modern techniques and organic farming practices while preserving the very essence and character of the region.

Chablis 2022 - Albert Bichot is a very characteristic example of both Albéric Bichot’s work and the unique character of the Kimmeridgian soil of Chablis. For this reason, fermentation occurred in stainless steel tanks, which enabled the exceptional minerality and freshness to manifest freely. The 10-month stay with the lees added complexity to a wine that combines harmony, balance and purity of aromas.

Tastes Like

Fine aromatic character with dominant aromas of lemon blossom, lemon, lime zest, green apple, peach, grapefruit and bergamot. The intense minerality is expressed by notes of wet stone and sea breeze.

On the palate, it has medium body, with crisp acidity, intense freshness and purity of flavors. The taste notes include lemon, bitter orange, fresh peach, and pear, all balanced by the aromas of dough and sour cream. The minerality is intense and creates a long and very distinctive aftertaste.

Try it with cockles, tagliatelle with crab broth, clams and cockles, sautéed shrimps, or goat cheeses!

Shrimps wrapped in prosciutto, with orange marmalade

  • 1/4 cup orange jam
  • 1/4 cup of white dry wine
  • 4 tsps. of fresh lemon juice
  • 1 tsps. of finely chopped ginger
  • 1 large clove of chopped garlic
  • 2 fresh onions finely chopped
  • 20 shrimp jumbo or medium-sized peeled (you can leave the tail)
  • 10 slices of prosciutto cut into half lengthwise
  • 2 tablespoons of vegetable oil
  • 10 wooden skewers dipped in water for 20 minutes
  • salt
  • pepper

In a medium bowl, mix the jam, white wine, lemon juice, ginger, garlic and onions. Add salt and pepper according to your taste.

Tosh the shrimps in the bowl and turn them to get fully covered with the mixture. Leave them for 20 minutes at room temperature. After 20 minutes, drain the shrimps from  the marinade.

Roll each shrimp with a slice of prosciutto. Put 2 shrimps in each skewer and carefully pierce prosciutto so that it doesn’t  get unfolded.

Preheat the grill to medium to high temperature. If we barbeque them, we are careful to roast them in a moderate fire. Dip the skewers in the marinade and bake until the prosciutto gets crispy and the shrimps opaque and slightly reddish, about 3 minutes on each side.

Secret:

Soak the wooden skewers in water (preferably hot) before putting them in the oven or the charcoal so that they won’t burn and tan while baking.
