Why do we love it?
The unique Chardonnay from Domaine Katsaros has made history as the most famous Greek barreled version of the variety and if you have tried it, you may have the feeling on your palate right now. In a unique white wine, Stella Chardonnay makes the barrel presence even more resonant. Exuberant and complex, it is the most premium and rare version of Chardonnay from Olympus!
 
Katsaros family has made wines based on classic French standards since the early 80s. Dimitris Katsaros handed over the reins of the winery to his son, Evripides, in 2007, who has taken it upon himself to continue the glorious course of the estate, creating every year wines reminiscent of the exuberance of Burgundy and, apart from accolades, gaining more and more fanatical audiences.
 
Stella Chardonnay from Domaine Katsaros comes from organic vineyards aged 30 years, located at an altitude of 650 meters. The fermentation took place in French oak barrels, while the maturation that followed for 10 whole months, gave volume, oiliness, and balance. After bottling, the wine remained in the bottle for another 15 months before being released to the market, where it acquired additional complexity. The result is an exuberant white barrel wine, with crisp lemony acidity, in perfect balance with the vanilla aromas of oak. A very elegant version of Chardonnay that you will not be able to enjoy every year, since it will only be produced in the years when there will be ideal weather conditions for the perfect ripening of the grape.
 
The 2022 vintage was one of them, so in order not to miss this rare opportunity act wisely. Aging will reward it and you!

Tastes Like
In the glass, it is a soft lemon. Impressive nose with aromas of lemon, citrus, peach, and butter, with hints of vanilla and brioche.
 
In the mouth, it is rich and oily, with full body and crisp acidity. Aromas of grapefruit, citrus, peach, lemon, honeysuckle, tobacco, and hazelnut create a very enjoyable complexity and a long aftertaste.

CHARDONNAY STELLA 2022 - DOMAINE KATSAROS

PAIR IT

Pair it with oily grilled fish, pasta carbonara, baked lasagne, and beef tenderloin with béarnaise sauce

Carbonara

  • ½ kg spaghetti
  • 4 large fresh eggs
  • 250 gr Guanciale chopped into cubes
  • 1/2 cup freshly grated Parmigiano Reggiano cheese
  • 1/2 cup freshly grated pecorino
  • Freshly ground black pepper
  • Salt

Put 3 liters of well-salted water in a pot and let it boil. When it starts boiling add the pasta and cook for 8-10 minutes, until they become al dente.

While the pasta is boiling, heat a large pan on medium heat. With very little olive oil (half a tablespoon), sauté pancetta or bacon for about 3 minutes, or until crisp. Then turn off the heat.

In a small bowl, mix the eggs and the cheeses until they are well mixed.

When the pasta is ready, take 1/2 cup of the pasta water and drain the rest.

Turn on the heat, in moderate temperature, and put the pan with the bacon on. Add the water from the spaghetti. Put the spaghetti in the pan and mix by shaking the pan over the fire for a few seconds until the most of the water evaporates.

Remove the pan from the heat and add the egg mixture and mix quickly until the eggs are tightened. The eggs will be cooked by the remaining heat. If the sauce looks too thick, add some more of the pasta water.

Sprinkle with freshly ground black pepper and serve immediately!
