Why do we love it?

MAD Dongo is the Hungarian wine that you can compare with premium Burgundies. Of course, if it doesn't disappear from the market within the next few hours...

Familiar or not with Hungarian varieties, you have just stumbled upon a "madly" premium wine from the region of Tokaj, specifically from the MAD winemaking team. The area is famous for its sweet wines, Tokaj Aszu, and for its particularly volcanic soils, which give a strong mineral character. The winemakers of MAD Dongo saw the potential of this terroir in 2009, and in collaboration with local producers, set out to highlight the area and the indigenous varieties. As expected, MAD soon gained a large audience and we wonder how we missed that till now...

MAD Dongo is a single vineyard wine from the charismatic Dongo vineyard, cultivated since the 18th century in the village of Tállya. The harvest was done manually and the wine was fermented by native yeasts. It then underwent malolactic fermentation and matured for 10 months in third-use Hungarian oak barrels called “zempléni”, which gave it its characteristic finesse.

Tastes Like

It's gold in the glass. Its nose is characteristically mineral with the clove and butter standing out, while the ripe stone fruits follow. After a few minutes in the glass, it reveals its complex buttery character, with even more intense minerality and a hint of yeast aromas, like fresh brioche. The sweet spices are due to the contact with the barrel.

In the mouth it is extremely balanced and full, with an intensely fruity character, high refreshing acidity that cleanses the palate and a long aftertaste.

PAIR IT

Pair it with pasta with white sauce, pasta carbonara, risotto with mushrooms, or with grilled fish.

Stuffed chicken roll with quince and potatoes in the oven

  • 1 stuffed chicken roll
  • 1kg potatoes cut into small pieces
  • 500 gr quince cut into thick slices
  • 2 lemons (juice and zest)
  • 1 onion
  • 2 cloves of garlic
  • 2 tbsps. Dijon mustard
  • 1 tbsp. curry powder
  • 1 tbsp. fresh oregano
  • 1 tbsp. fresh thyme
  • 1/2 cup of olive oil
  • Salt and pepper
  • 600 ml of vegetable stock

Preheat the oven to 250 ° C. Add the olive oil to the casserole, then the chicken roll, the cut quince and the potatoes.

Mix the remaining ingredients with a small portion of the stock and pour the mixture on the roll and potatoes. Add stock so that the mixture covers the potatoes.

Cover the casserole and, after lowering the oven to 150 ° C, put it in the oven. From time to time we open the casserole and check whether we need to add some water.

Once ready, uncover the casserole and raise the oven temperature. Leave it there until it's golden brown.
