Why do we love it?
Elegance lies in details and in delicate balance and Kompsos white of Karavitakis Winery has it all! To be precise, it is designed to be the epitome of elegance, combining 3 varieties, each of which gives something different and makes Kompsos what its name implies.

Nikos Karavitakis wanted to create a delicate, aromatic, balanced wine that may accompany almost everything. He had in mind the elegance that comes from marrying different varieties and characteristics but at the same time, he wanted this wine to bear the Cretan mark. The backbone of the blend is Assyrtiko with its structure and lemony acidity. Then comes Vidiano with its oily texture and peachy character. And finally comes Malvasia which adds aromatic intensity and floral, botanical notes. The result is as good as if these three varieties were born to complement each other in an explosion of finesse. The wonderful blend was bottled in an amazing bottle, with a label that is like a true work of art. Put it next to ceviche, sushi, grilled apricots with gorgonzola, fried fish, stuffed peppers and, anything else you can imagine. It really pairs with everything.

Tastes Like

It has pale lemon color with greenish hues and intense aromas of pear, peach, lemon, pineapple, citron, lime, grapefruit, lemon and apricot. Herbal and hyacinth hints give a more interesting touch.

Juicy mouth with medium body, balanced acidity and slightly oily feeling.

PAIR IT

Pair it with sea bass ceviche, chicken fillet with orange sauce, shellfish, or green salad with grilled apricots and goat cheese.

Stuffed veggies with couscous

For stuffing
- 250 g couscous
- 3 fresh onions
- 1 dry onion
- 2 cloves of garlic
- 1 small bunch of parsley
- 2 tablespoons of black currants
- 2 tablespoons pine nuts
- 40 ml. olive oil
- 150 ml. tomato juice
- Freshly ground pepper
- Salt

You will also need:
- 4 tomatoes
- 4 zucchinis
- 4 green peppers
- 60 ml. olive oil
- 100 ml. tomato juice
- Freshly ground pepper
- Salt

Cut and remove the lids from the veggies and empty the interior.

In a large bowl, finely chop tomatoes, parsley, onions and garlic. Add tomato juice, pine nut, raisins, salt, pepper and 40 ml. olive oil, mix and add the couscous and 50 ml. water.

Stuff the vegetables and place them in a large saucepan next to each other. In a bowl, mix 60 ml. olive oil, 100 ml. tomato juice, 150 ml. water, salt-pepper and pour over the veggies.

Place the saucepan on medium heat, for 3-4 minutes and then simmer for about 35 minutes, until the vegetables are softened or when the juices run out. Let cool and serve or you can eat it cold.

Notes
- You can add in the pot and a couple of potatoes cut into chunks.
- You can make it in the oven too.
- Pine nuts and raisins can be omitted.
