Pecorino, besides a delicious cheese, is also a grape variety, which gives excellent wines! Did you know that? If not, it's time to find out about it! Pecorino by Francesco Cirelli is a tasty, buttery wine, just like the homonym cheese! Read below and you will understand what we’re talking about ...
Francesco Cirelli belongs to the special category of "mad" and passionate winemakers. To understand what we mean, he’s a sworn biodynamic grower, and that's because he's passionate about the vine, the environment, and his birthplace. He strongly believes that with this way of farming, he's protecting them. In his wines, nothing chemical comes in, from the beginning (vine) to the end (bottle). This is a dangerous “sport” because if something goes wrong, the whole crop of the year may be lost. Francesco is convinced it deserves the risk, as he thinks he is an alchemist when he makes his wine and creates a magic potion, an antidote to misery. And he wants this "potion" to reflect precisely the characteristics of the variety, the land, the terroir, and his sentiments.
Pecorino, from Colline Pescaressi, is that kind of wine. Careful work in the vineyard so that every year they get better grapes, so the wine will receive the minimal intervention of the winemaker. Fruity but mainly buttery, with savory flavors is a wine that wins you over at the first sip.
We forgot to tell you that it goes well with countless dishes, summery or not! Try it... yesterday!
