Ok, here with the Petit Sauvage! Blanc by Pierre & Antonin we have a huge gift for you! Actually 4 because all 3 of his siblings are equally amazing.

Two great guys, Pierre Caizergues and Antoine Bonnet decided to establish a magical winery in an even more magical place, in the Languedoc region, inside Carcassonne, with the largest medieval fortress in the world. Absolutely loyal to organic cultivation, natural vinification and zero interference with the wine as well as with the environment, they paid attention to every detail to an extraordinary degree. They managed to achieve a zero carbon footprint in all their winery operations, minimized energy and water consumption, significantly reduced the weight of their bottles by using specially made bottles from neighboring Aldi, and even for their corks they chose Roussillon which is not far away. Oh, and the wax they use to seal the bottles, they produce it themselves from the bee hives they add every year inside their vines. As for the varieties they grow, they are hybrids, that is, they were created by grafting different varieties with a lot of experimentation, in order to achieve greater resistance to diseases so that the use of pesticides and chemicals is not necessary.

For the Petit Sauvage! Blanc, the hybrid variety Souvignier Gris was used, which is a combination of Seyval Blanc and Zähringer. After remaining 5 hours in contact with the lees, it was vinified in conical tanks, where it spent the next 5 months. It was then bottled with zero added sulphites, resulting in the purest expression of the terroir of the Languedoc region. Hasn't it already piqued your curiosity?

Tastes Like
In the glass, it is pale lemon. Intense aromas of ripe red apple, pear, fresh, and sweet quince, with hints of nuts on the finish.
 
In the mouth, it is full, with cool acidity. Quince, lemon, sweet musk lemon, pear, and almond complete a delightful ensemble . Notes of hibiscus, eucalyptus, and green tea give a very pleasant and refreshing character which remains in the very long aftertaste.

PAIR IT

Enjoy it as an aperitif, or with sea bass ceviche, grilled shrimp, varieties of white cheeses

Tabbouleh salad

  • 1 cup of couscous
  • salt and freshly ground black pepper
  • juice of a lemon
  • 3 tablespoons of olive oil
  • 1 cup of chopped parsley
  • 1/2 cup chopped coriander
  • 2 tbsps chopped fresh mint
  • 2 ripe tomatoes, cut into cubes
  • 3 fresh onions, finely chopped

Heat water, after salting it first,  in a medium-sized pot and leave it to boil. Add the couscous and leave to moderate heat for 7 to 8 minutes. Drain the couscous and let it cool down. In the meantime, in a small bowl, mix lemon juice with olive oil. Add salt and pepper.

In a large bowl, mix couscous, parsley, coriander, mint, tomatoes and onions. Add the mixture of lemon juice and olive oil and salt and pepper. Leave it for about 20 minutes before serving to marinate.
