Why do we love it?

Crisp acidity, rich citrus aromas, freshness, and delicate floral notes! If we haven't convinced you yet, this Plyto is a wine that you will enjoy in winter and summer, and in your mind, you will thank the Cretan terroir for the treasures it hides!

This is not just a new series of wines. It is a wine collectiva that started in 2020, to highlight not only the characteristics of the native varieties of Crete but to shine a spotlight on the vineyard and its collaboration with each variety. And who is involved in this collectiva? Konstantinos Manouras, the vineyard, the Cretan land, the fruits that ripen with excessive love and attention, and of course the fury and madness of the entire winemaking process, from the vineyard to the bottling. He could not better characterize it as “Theros, Harvest, War”!

At Th{eros} Wines Collectiva, low-intervention methods are followed, without pesticides and heavy chemicals, while the combination with new techniques allows the fruit to show each time the special characteristics of the microclimate in which it has “grown”. The result of these single vineyard winemakings is the absolute and most natural expression of fruit and soil.

Plyto comes from 100% grapes of the variety, cultivated in anhydrous and high-altitude pre-phylloxera vineyards and fermented spontaneously with indigenous yeasts in stainless steel tanks, at a controlled temperature. The grape maintained its freshness and resulted in a very juicy, highly balanced, and refreshing result.

Konstantinos has a special view and relationship with art and if you have not met him in person, you can simply taste his wines to understand.

Tastes Like

In the glass it is intensely lemony. Intense floral character of jasmine, lemon blossom and evening primrose are framed by the freshness of the aromas of citrus, lemon and grapefruit. The mineral notes and the subtle botanical elements further enhance the character of the variety.

In the mouth it is full of crisp, refreshing acidity. Citrus aromas maintain freshness and the salty notes add intense elegance and balance. Here too the soft botanicality gives a special finesse making it very gastronomic.

PAIR IT

Pair it with aged gouda cheese, lemon pork, chargrilled linguine with roe and lemon, smoked salmon

Salmon with Dijon sauce in the oven

  • 1/4 cup butter, melted
  • 3 tbsps. of Dijon mustard
  • 1 tbsp. of honey
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped peanuts
  • 4 tsps. finely chopped fresh parsley
  • 4 salmon fillets
  • salt and pepper
  • 1 lemon, for garnish

 

Preheat the oven to 200oC.

In a small bowl, mix well butter, mustard and honey. In another bowl, mix breadcrumbs, pistachios and parsley.

Brush each salmon fillet with the mixture of mustard and honey and sprinkle with the breadcrumb - pistachio mixture.

Bake in the preheated oven for 12 to 15 minutes or until it becomes flaky. Season with salt and pepper and garnish with slices of lemon.
