Albert Bichot’s Pouilly Fuisse 2021 is a classic yet more vibrant expression of Burgundy. The barrel-aged touch sets the tone, and the juicy, ripe fruit overflows in every sip, delighting the palate.

 

The Bichot family, renowned for its exceptional quality and unwavering pursuit of perfection, has a rich history spanning over a century and a half. Their roots can be traced back to Burgundy, where they have been involved in the wine industry since 1831. Initially established in the heart of the Beaune Valley, the family gradually expanded its operations throughout Burgundy, from the northern regions to the southern ones. In recent years, since 1996, they have made a significant shift towards organic farming, led by the visionary Alberic Bichot. Under Bichot’s guidance, a new and even more remarkable era has dawned for the winery, promising even greater achievements.

The vineyards are situated in the Mâconnais region, near the villages of Fuissé, Solutré, Pouilly, Vergisson, and Chaintré. Thirty percent of the wine undergoes fermentation and aging in French oak barrels for 8 to 9 months, while the remaining portion is fermented and aged in stainless steel tanks. This combination results in a highly accessible and expressive rendition of Burgundy, not only in terms of price but also because it is ready to be fully enjoyed now, without having to wait.

Since 2020, Pouilly Fuissé has been granted new premier cru designations. A single sip of Albert Bichot’s Pouilly Fuissé 2021 will undoubtedly demonstrate why the region rightfully earned its inclusion in the esteemed top class category.

Tastes Like

It boasts complex aromas of citron, lime, peach, lemon, pineapple, vanilla, butter, toast, and oak. Apricot and nutmeg hints add a touch of depth.

On the it has medium body, with a harmonious balance of acidity and an oily texture. The fruit flavours are prominent but beautifully complemented by notes of spice, butter, and minerality.

It goes excellently with chicken a la creme, penne with mushrooms and bacon, sole sautéed in butter.

Tagliatelle with mushroom sauce

  • ½ kg of fresh mushrooms
  • 1 clove of garlic chopped
  • 1 tbsp. of lemon juice
  • 3 tbsps. of olive oil
  • 1 tsp. of salt
  • freshly ground pepper
  • 1 tbsp. of chopped parsley
  • 1/2 kg tagliatelle pasta
  • 1 glass of white wine
  • 1/4 cup of cream
  • 3 tbsps. Parmesan cheese and as much as you like for serving

Clean the mushrooms. Cut the edges and then slice them and mix them with the lemon juice.

In a large frying pan add the olive oil and put it in a medium - high heat and when it heats up well, add the garlic stirring well to keep it from sticking and not burn. Add the mushrooms, stir well and cover the pan with a lid. Sauté for 4 minutes stirring frequently.

Remove the lid and add salt and pepper according to your preferences. Stir occasionally and   allow them to absorb their juices and become brown (about 5 minutes).

At the same time, in a pot, boil some water and prepare the tagliatelle according to the instructions of their packaging.

Pour a glass of white wine in the pan, preferably from the wine with which you will accompany the plate.

Add cream and grated Parmesan and let it simmer by lowering the heat, for 3 -4 minutes until it thickens. Remove the pan from the fire, add the pasta, mix well and add the parsley. Serve with grated parmesan cheese.
