Why do we love it?

(P)ampelia is a single vineyard Assyrtiko from a selected vineyard, which could not go unnoticed by the team of the emblematic winery, for its exceptional yields and the quality of its fruits. It has been part of the winery's approved organic vineyards for 4 years and will impress you with its beauty, outside and inside the bottle!

Haridimos Hatzidakis is one of the greatest Greek wine producers, who put Greece on the world wine map in a resounding way. This genius with inexhaustible wine talent created a unique winemaking culture. The next generation continues to build on these foundations. The exceptional terroir of Santorini gives a unique character to the wines. However, the climatic conditions of the island, contribute to this term, several times keep testing them to the extreme. This particular vineyard stood out for this reason. Despite severe droughts and adverse weather conditions, it produced high-quality fruit. That beautiful that should have been vinified separately. Immediately after the harvest, which is done manually, the grapes are left for 24 hours at low temperatures, while the 12-hour pre-fermentation cryo-extraction that follows enhances its refined aromatic character. The grapes are lightly pressed and the fermentation is done with native yeasts. Then 70% stays in contact with the lees for 12 months in stainless tanks, while the remaining 30% in French oak barrels, gently embracing and smoothing the sharp angles of Assyrtiko.

Rabelia was a rare Cycladic name that the Italians, not without reason, called Bella! Beautiful and rare, just like this delicious wine, since it comes in only 1800 bottles. The label is decorated with one of the works of Haridimos’ daughter, Ariadne.

If you're quick and patient, you might be able to get an extra bottle for aging. The relationship between time and Assyrtikos is a relationship of life!

Tastes Like

In the glass, it is an intense lemon with bright golden highlights. Intense floral aromas of honeysuckle, sweet musk lemon, lemon peel, ripe peach, and grapefruit. Sea breeze and hazelnut aromas, framed by very fade notes of fennel. The mineral character of the wine and the flint aromas are intense.

Rich in the mouth with a unique acidity that is rounded off by slightly vanilla notes. Citrus and bergamot are framed by notes of wet stone, toasted sourdough bread, and smoke. The subtle saltiness further enhances its long aftertaste.

Pair it with grilled oily fish, linguine with quince, or lamb with herbs in the wood oven.

Pasta with seafood sauce

  • 1 tbsp. of olive oil
  • 1 onion, finely chopped
  • 1 clove of garlic, finely chopped
  • 1 tsp. of paprika
  • 400g chopped tomatoes
  • 1 liter of chicken broth (from cube is fine)
  • 300 grams of macaroni
  • 240g pack of frozen seafood mix
  • some parsley leaves, finely chopped,and slices of lemon for serving

Heat the olive oil in a wok or a large pan. Add onion and garlic and saute them in moderate heat for 5 minutes until they are softened. Add paprika, tomato and broth and let the mixture boil.

Reduce the heat to simmer and add the pasta. Cook for 7 minutes by stirring occasionally to avoid sticking together. If you use a ready mix of seafood, defrost it and add it in the end, cooking for another 3 minutes. Season with salt pepper as desired. Finally, sprinkle with parsley and serve with slices of lemon.
