Why do we love it?

Laoudia, in the dialect of Santorini, are the holes where hares nest, but Laoudia is also a top Assyrtiko, from Santorini. The minimal production Assyrtiko, Santorini by Tselepos - Chrissos, from Pyrgos is sold out almost every year almost immediately after it has swept all the awards!

The grapes come from a single vineyard with very old Assyrtiko vines at the village of Pyrgos, planted in terraces (called pezoules). Harvest takes place only when the grapes have over-ripened and is of course manual. And if we have not already grabbed your attention, now we move to the good part. The fermentation and maturation of Laoudia was done in amphoras, and the wine remained there with its fine lees for 8 months. It was then bottled and left for about another 10 months in order to "rest" and reach your glass as a volcanic eruption!

Complexity and balance, as you expect them from a real maître of rich and expressive wines. Well, Giannis Tselepos would not be happy with anything less than perfect.

Its extreme concentration which you can cut through with a knife, the electric acidity, combined with explosive aromas and buttery, rich body make Laoudia Canava Chrysou Tselepos a truly collectible acquisition. Although it is white, we suggest you treat it like a red wine. Uncork it an hour earlier and enjoy it slightly chilled.

Tastes Like

Laoudia Canava Chrysou Tselepos has medium lemon color and complex nose. Citrus flavors flood the glass from the very first moment, with citron, lemon, bitter orange, and grapefruit dominate. Sweet aromas of honey, butter, and vanilla are balanced with spicy saffron and ginger hints. Smoky notes of gunpowder and flintstone are blended very nicely with the rest of the aromas, completing the multidimensional character of an absolutely expressive Santorini.

Impressive palate with its sharp acidity being the backbone of the really juicy and rich body. Perfectly balanced buttery texture with lemony sensation. Mouth-filling aromas of lime, orange, almond, peach, honeycomb, butter, and toast. Some petroleum hints are paving the way for the future.

PAIR IT

Pair it with pork with orange, grilled sea bream, oysters with miso sauce.

Arugula salad with smoked salmon, avocado and roasted almond

  • 300 grams of arugula as fresh as possible
  • 200 g of smoked salmon
  • 50 g roasted almonds
  • an avocado, thickly cut
  • a little dill
  • a little fennel
  • 50 g of oil
  • 2 lemons
  • a little orange juice
  • salt
  • pepper
  • three types of peppercorns: green, red, black

Cut salmon in strips. Marinate for 3 hours in the refrigerator, in a bowl of lemon juice, finely chopped dill and fennel, pepper and a little olive oil. Mix by hand to combine all the ingredients.

Chop the roasted almonds.

Put the peppercorns in the mortar and break them lightly to release their aromas.

In a large salad bowl, cut the arugula in large pieces, add the avocado, pour over the salmon strips and sprinkle with pepper and roasted almond.

While serving, sprinkle with a dressing of: lemon, salt, a little orange juice and minimum olive oil, that we have previously mix well.
