The grapes come from a single vineyard with very old Assyrtiko vines at the village of Pyrgos, planted in terraces (called pezoules). Harvest takes place only when the grapes have over-ripened and is of course manual. And if we have not already grabbed your attention, now we move to the good part. The fermentation and maturation of Laoudia was done in amphoras, and the wine remained there with its fine lees for 8 months. It was then bottled and left for about another 10 months in order to "rest" and reach your glass as a volcanic eruption!
