Yiorgos Xydakis strikes again! After Potamissi, he presents us Serfiotiko - Assyrtiko 2018. Yes, as you can imagine it is a special, gastronomic white wine and extremely hard-to-find (only 210 bottles and 15 magnums!), like all his wines are.
Yiorgos Xydakis, dentist in the profession, tasted, for the first time, a sweet wine from sun-dried Kountoura grapes, in 1966, from his winegrower grandfather. That was enough for him to fall in love with wine and local grape varieties. Xydakis Winery was founded in 2001 and it included an old vineyard with native Cycladic grape varieties with which he engaged as an amateur, and bottled wines for friends and wine connoisseurs. His philosophy is based on wines from old vines, mainly from Mykonos but also from the surrounding islands too, with minimal interventions and indigenous yeasts. In blend the ratio is about 67% Serfitiko and 33% Assyrtiko. It ferments with indigenous yeasts and matures on its fine lees for 6 months in oak barrels. Its seductive buttery sensation comes in perfect balance with its sharp acidity and light tannic texture.
