Chemical engineer and oenologist Dimitris Kioutsoukis and his family decided to start their small boutique winery, based on permaculture principles. That is the design of a functional system of natural cultivation, which comes from the observation of nature and the gentle harmonization of human intervention, with the aim of their most natural possible cooperation. In Oreokastro Thessaloniki, the cold winters and hot summers give the 110 acres of family-owned vineyards the ideal conditions for the cultivation of Greek and foreign varieties with an emphasis on Xinomavro, Malagouzia and Assyrtiko and the production of amazing wines that speak for themselves!
Stalisma white contains 80% Malagouzia, harvested at the right time, to maintain the high acidity and aromatic intensity of the variety. The 20% Xinomavro added gave a slightly tannic character, volume, and intensity to the body and aftertaste. The two varieties, after fermenting separately, became a blend and remained to rest in contact with the lees for 3 months. The bottling was done without filtering and the result is imposing.
